Coconut rice
Steps:
- Heat a pan, add oil, black mustard seeds, methi seeds, curry leaves, sliced fresh coconut and dried red chillies.
- Mix well and fry for 1-2 minutes.
- Add turmeric powder, salt and mix well.
- Add grated fresh coconut and boiled rice.
- Mix well and toss till the rice is heated through.
- Add roasted crumble peanuts. Serve it in a bowl.
