Coconut rice

Steps:
  1. Heat a pan, add oil, black mustard seeds, methi seeds, curry leaves, sliced fresh coconut and dried red chillies.
  2. Mix well and fry for 1-2 minutes.
  3. Add turmeric powder, salt and mix well.
  4. Add grated fresh coconut and boiled rice.
  5. Mix well and toss till the rice is heated through.
  6. Add roasted crumble peanuts. Serve it in a bowl.
